Ingredients
*.8 chicken drumsticks
* 1 teaspoon kosher salt
* ¼ teaspoon black pepper
* 2 tablespoons olive oil
* 1 medium onion, chopped
* 2 garlic cloves, chopped
* ¼ teaspoon dried sage
* ¼ teaspoon dried thyme
* ¼ teaspoon dried rosemary
* 2 tablespoons tomato paste
* ¾ cup dry red wine
* 1 (28-ounce) can diced tomatoes, no salt added
* 1 cup low-sodium chicken broth
* 2 tablespoons basil leaves for garnish
Instructions
Preheat oven to 350 degrees F.
Season the chicken with salt and pepper. Heat a Dutch oven or over medium heat. Add the olive oil. When the oil is hot, add the chicken and cook until browned on all sides, about 5 minutes per side.
Add the onion, garlic, and herbs. Cook 5 minutes. Stir in the tomato paste, then add the wine and bring to a boil. Allow to boil and reduce for 5 minutes.
Add the diced tomatoes and the chicken stock. Bring back to a boil, then immediately transfer to the oven.
Bake, uncovered until chicken is cooked through and the sauce has thickened about 40 minutes. Garnish with basil and serve.
